A Taste of Kyoto in the Heart of Rome: Culinary Journeys Series

Six Senses Rome is excited to announce the kick-off of the Culinary Journeys Series: a fascinating experiential journey through some of the world’s most renowned international cuisines in partnership with a selection of Six Senses properties around the globe.

Part of this season’s wider entertainment program at NOTOS Rooftop, the first culinary event consists in a Japanese pop-up restaurant in collaboration with Six Senses Kyoto. Scheduled in the second half of June, it will feature a co-created menu with Six Senses Kyoto Executive Chef Hiroki Shishikura and his team who will take over the kitchen of the rooftop in the evening.

Inspired by the Sekki culinary philosophy based on the Japanese agricultural calendar and its 24 micro-seasons, the menu features refined dishes celebrating the delicacy of Japanese cuisine and the exquisite taste of its ingredients. Highlights include charcoal-seared bonito (bonito fish served with grated ginger, pickled plum and apricot) and bamboo shoots with Kyoto miso and Sansho pepper (braised bamboo shoots served with fermented miso and Sansho pepper leaves dressing). The menu also includes unmissable options of sushi, sashimi and ramen, all prepared with the freshest and most authentic ingredients. The Rome-Kyoto aperitivo offering fuses seamlessly both culinary worlds and includes Amatriciana gyoza and fried mozzarella with shiso leave pesto, among others.

Six Senses Kyoto Executive Chef Hiroki Shishikura says: “It is a true honor to bring Sekki’s micro- seasonal philosophy to the heart of Rome. As two of the world’s most vibrant capitals, Kyoto and Rome offer an exciting opportunity to explore the synergy between distinct culinary wisdom and exceptional local ingredients. I am intrigued to explore how Italian culinary artistry will embrace Japanese inspirations.” Six Senses Rome Executive Chef Fabio Sangiovanni adds: “I really look forward to kicking-off the Culinary Journey Series with this unique collaboration with Six Senses Kyoto, and to bringing a touch of Japan’s essence into Six Senses Rome’s culinary offerings. I am sure it will be an amazing experience to work together with Chef Hiroki”.

The pop-up restaurant will be available from 17 to 27 June from 6:00 PM.
